Hi, again! It’s Thursday, which means this is a bonus post. I couldn’t help myself. I made these dark chocolate energy bites earlier this week and I just had to share them with my peeps. (You.)
I’ve gotten a few requests for on-the-go snacks and treats, and because whenever I hear “treat” I think dark chocolate, here’s my solution.
These dark chocolate energy bites are SO delicious and take no time at all to whip up. (Which is good, because they also don’t last long in my house.)
This time I made them in my mini muffin tin, but I’ve had them as drops and they’re just as yummy.
The best part about these little guys is that you can make them your own and top them with whatever your heart (or your sweet tooth) desires. And, since the toppings are good for you, you can pretty much consider them a health food. You’re welcome.

The topping choices are endless. This time I chose unsweetened coconut, toasted pepitas, craisins, slivered almonds and chia seeds.
Next time I’m going to add some sea salt and a dash of cayenne pepper.
You could use something fancy like a double-boiler, but I just put chocolate chips in the microwave to melt. (Be sure to stir often so they don’t burn.)
Pour the melted chocolate into a mini muffin tin.
Refrigerate for less than 5 minutes to set the chocolate.
Top with your favorite toppings.
Refrigerate for 1 hour.
Enjoy (and try not to eat them all in one sitting).
Perfect bite-sized dark chocolate wonders.
