3 Day Food Diary

Hi, sweet friends. I’ve been promising to share an updated 3 Day Food Diary for awhile, and here it is!

First, a few things:

  • I usually eat meat (ground turkey) once a week on Taco Tuesday. Otherwise, no meat for me.
  • I have always been an 80/20 girl. 80% of the time, I’m eating well and fueling my body with greens and fresh food. 20% of the time, I’m eating sweets and preservatives. It’s just how it is.
  • I am NOT a foodie. I am not at all adventurous with food, and I can eat the same thing every day for months on end.
  • I am still doing Intermittent Fasting, and will generally fast 6pm – 9/10am each day. I will still have my coffee right when I wake up.
  • I’m still breastfeeding and I tried to share overall what I eat – some days I eat more and some days I eat less.

FOOD DIARY: DAY ONE

COFFEE

Coffee is the reason I get up in the morning, and I will have 1 or 2 cups before I break my fast.

Coffee with almond milk, a splash of half + half and stevia.

BREAKFAST

I usually break my fast post-workout. One of my go-to’s is Greek Yogurt with granola + fruit.

  • A cup of 0% plain Fage greek yogurt with Purely Elizabeth Original granola, strawberries + a drizzle of honey.
  • Sometimes I switch it up and add blueberries and shaved almonds.

LUNCH

3 day food diary, what I eat in a day: lunch
My version of avocado toast:
one piece of Ezekiel bread (toasted)
1/4 avocado
1 fried egg
handful of arugula
red pepper flakes

AFTERNOON SNACK

  • Yes, I stole this from the kids.
  • One of my favorite kombuchas + it satisfies my sweet tooth.

DINNER

I’ve been eating this same salad for years. For real. I eat it at least twice a week.

Mixed greens + arugula
mini peppers
avocado
cucumber
cauliflower
feta cheese
Balsamic vinaigrette dressing

DESSERT

3 day food diary, what I eat in a day: dessert
A new favorite find. Sometimes I will snack on these before my run – they’re filling and sweet and SO delicious. I found them in the refrigerated area at the grocery store.

FOOD DIARY: DAY TWO

BREAKFAST

A Daily Harvest shake is my go-to when I don’t have much time for breakfast.

LUNCH

Sometimes I make myself a healthy lunch. Sometimes I eat my kids’ grilled cheese crusts.

  • An apple + peanut butter is always my go-to when I don’t have time to make something.

AFTERNOON SNACK

The bar version of the bites above. SO yummy.

DINNER

My version of Taco Tuesday: a giant taco salad topped with tortilla strips.

Mixed greens
ground turkey with taco seasoning
black beans
black olives
avocado
taco sauce
tortilla strips

DESSERT

3 day food diary, what I eat in a day: dessert
A new find. I have such a sweet tooth, and I’m *trying* to curb it. I found these last week, and I’ve been having a few when my sweet tooth hits. I’ll have two.

FOOD DIARY: DAY THREE

BREAKFAST

Oatmeal has always been one of my favorite breakfasts. I make quick oats with almond milk and I’ll sprinkle in blueberries, shaved almonds and a drizzle of honey.

LUNCH

3 day food diary, what I eat in a day: lunch
Again, my go-to salad. This time I added tortilla strips to make it a party.

Mixed greens + arugula
mini peppers
avocado
cucumber
feta cheese
tortilla strips
Balsamic vinaigrette dressing

AFTERNOON SNACK

A handful of tortilla chips + a piece of light string cheese

DINNER

  • A mix of any veggies I have on hand – broccoli, mushrooms, carrots, celery, peppers
  • This rice is such a time saver. I always make sure I have a few pouches on hand.
We have veggie stirfry once a week. It’s a great way to use up any of the veggies that I haven’t used yet. I usually use a mix of frozen and fresh veggies.

Sometimes I will make some chicken for my husband to add into his.

DESSERT

A handful of semi-sweet chocolate chips

    This is great! Does your family eat the same that you eat or do you make them something else? I have a 4 year old and can’t imagine her eating a big salad like that!

      Most of the time, my kids will eat some of what we’re eating and then I’ll make sure they also have something they like. My husband will always eat what I eat, but sometimes I will make him some meat to have on the side. Hope this helps! xo

    Thank you for posting this! Yep, coffee is the reason for waking! I make a ritual once a week and make my cold brew, I buy expensive shade grown, organic, fair trade, local and fresh roasted coffee beans haha coffee is life. I have no hobbies or time for myself, my coffee is all I have.

FREEDOM | This might sound dramatic, but hear me out. When I made the decision to break up with alcohol (wine specifically, since that was my drink of choice), I felt…FREE. No more mental energy spent on that tricky alcohol equation, wondering how much to drink, if I should have another drink, should I have a drink at all, etc, etc and on and on. Taking alcohol out of the equation completely is SO freeing.   
  
DARK CHOCOLATE | I’ve always been one to prefer eating my calories rather than drinking them. So why, then, was I OK with drinking so many calories when it came to red wine? (Not to mention the sugar.)  
  
RESTFUL SLEEP | Back when I would drink a glass (or two or three) of wine while I was cooking/eating and after dinner, while at the time I didn’t realize it, now that I’ve been without alcohol for so long, I can say unequivocally that wine messed with my sleep. As a mom, my whole goal in life is for my family and me to get good sleep. So, it’s ironic that I was drinking something that would almost guarantee I wouldn’t get restful sleep.  
  
A CLEAR MIND | This one is a big one. Alcohol dulls…everything. It’s what tricks us into thinking we’re more relaxed and that it helps with anxiety. (Spoiler alert: it makes anxiety SO much worse.) It dulls our senses, which means that we’re not fully present to experience LIFE. I don’t know about you, but it feels like I blink and my kids are older. Taller. Putting on their own shoes. I don’t want to dull my senses. Life goes so quickly and it’s all such a blur already, I don’t want to intentionally make it more so with alcohol.

It’s been a month since we lost my dad. It feels It’s been a month since we lost my dad. It feels like a year. Today, I felt off all day. So, while the kiddos were in the bath, I wrote this...🖤 
 
It goes on.  
 
Phones ring.  
Coffee brews.  
Drains clog.  
Deadlines loom.  
 
We breathe in. Out.  
 
Toast burns.  
Cars pass.  
Clothes wrinkle.  
Kids grow.  
 
We breathe in. Out.  
 
Dogs bark.  
Flowers bloom.  
Tears fall.  
Pages turn.  
 
The sun rises.  
Sets. 
Despite it all.  
 
We breathe in. Out.
So excited to be included in this month’s @sheri So excited to be included in this month’s @sheridanrdmag Shore Vs. City feature! It was so fun + I’ll take any excuse to dress up and be pampered a bit. 😉  
 
Also, in case you see pretty pics + forget what goes on behind the scenes, I need to let you in on a little secret: I was scared.  
 
I was scared I would mess it up. That the photos would be awkward (hey 👋🏻), that my answers to the questions would be lame. That overall I would...come up short.  
 
Still, I said yes, anyway.  
 
I said yes through the fear and I decided to be brave.  
 
I’m telling you this because I think it’s all too easy to assume that other people aren’t scared. That you’re the only one.  
 
I can honestly say that literally ANY time I’ve done something out of my comfort zone, I’ve been scared. (So pretty much like anytime I deviate from my normal everyday comfy routine. 😬) 
 
Being scared isn’t bad.  
 
I think being scared just might be the first step in being brave.  
 
(Oh and also. I don’t mean like “in your gut” scared. Listen to your gut. That’s a whole other post. 😉)

I thought it was an April Fool’s joke. I’ve be I thought it was an April Fool’s joke. I’ve been on a waitlist for the vaccine and got the call that there was an extra dose. 🙌🏻 I don’t think I’ve ever moved so fast in my life.  
 
After the brutal month of March, this was the glimpse of hope that I needed. ❤️ 
 
(Also. Please positive comments only. If you spread disinformation or debate science, I’ll block you. It’s not that kinda party.) ✌🏻😘
I got ready today for the first time in weeks. Did I got ready today for the first time in weeks. Did my hair, put on mascara, wore JEANS. The works.  
 
I still feel off and overall pretty down, but it helps to do little things that make me feel like myself again.  
 
If you’re going through a tough time and catch yourself feeling worse after scrolling Instagram, please know you’re not alone.  
 
Also remember that chances are, there is so much more to the story than just a pretty photo.

I woke up this morning feeling a bit better. Life still feels turned on its side - I guess grief can do that - but I’m feeling some hope, too.
