Summer Spaghetti with Zoodles + Prego Farmers’ Market

In our house, I’m always trying to get my family to eat more vegetables. One of my favorite ways is with zoodles. Have you guys tried them yet?! Seriously amazing. I’ve been trying to swap them for starch whenever I can.

So, what’s a quick + easy way to get the fam to eat those veggies? Enter: Summer Spaghetti. YUM. Add Prego’s new Farmers’ Market sauces (found at Wal-Mart), and it’s a match made in culinary heaven.

I started at our local Farmers’ Market for the zucchini. (Do Farmers’ Markets make anyone else completely happy? There’s something about keeping it local, and seeing everyone come together to eat fresh fruit + veggies. Pretty cool if you ask me.)

Now the tough part: choosing from the three new Prego Farmers’ Market sauces. They’re all made with the kind of vegetables you’d find at a Farmer’s Market like vine-ripened tomatoes, garlic and basil. They’re SO fresh and delicious and perfect for all of your favorite Italian dishes. I decided to go with the Prego Farmers’ Market Tomato & Basil Sauce.

Next up? The zoodles. The spiralizer is such a neat little gadget. And how pretty are the zoodles?! The best part? So easy. Just chop off the ends of the zucchini, and start spiralizing (is that a word?).

There are a lot of ways to cook zoodles, but the easiest (and therefore my favorite) way is to put them in a microwave-safe dish covered for 2 minutes in the microwave.

Pat them dry with a paper towel once you remove them from the microwave.

On the stove top, heat your favorite Prego Farmers’ Market sauce.

Add your favorite fresh vegetables. (I chose baby bella mushrooms.)

Top with shaved Parmesan cheese.

Enjoy your Summer Spaghetti!
