If you’ve hung out with me for more than 15 minutes, you probably know that I LOVE Peeps. The day they decided to have Halloween, Christmas, Groundhog Day Peeps was right up there with my wedding and the birth of my daughter.
So, why not make America’s fav quick treat with those little chicks of sugary wonder? Let’s call them Peep Krispie Eggs 🙂
Full Disclosure: I tried this with pink and purple peeps. Well, let’s just say the purple looks gray once everything is done. So my advice is to skip the purple (or just hurry up and eat them before anyone sees them…).
This recipe is easy, fun and delicious. I hope you enjoy!
(I know what you’re thinking: they’re almost too cute to eat. Almost.)
(makes 18-20 eggs, depending on size)
30 peeps (3 3oz packages)
5 cups Rice Krispies
3 Tablespoons of Butter
Ghiradelli White Chocolate Melting Wafers
Place Peeps in a medium pot (don’t make eye contact). Add butter. Melt over low-medium heat. Stir constantly until smooth.
Add 5 cups of Rice Krispies. Stir until evenly coated.
Lightly spray inside of plastic eggs with baking spray.
Fill each side of egg (I found it easiest to use my hands), making sure they are full without gaps. Close egg together and let sit for a couple of minutes.
Take treat out of the egg.
Let cool for 1 hour. Then, decorate!
Have fun with the kiddos! Melt some white chocolate and make a huge mess with sprinkles.
I don’t know about you, but anytime I hear “double boiler” I totally zone out. I don’t have one and have zero plans to get one. Thank goodness these goodies melt up wonderfully in the microwave.
I found it worked best when I microwaved them in 15 seconds increments.
Because life is better with sprinkles. 🙂
